For the last 40 years the FDA has warned Americans to avoid foods high in cholesterol, thinking it may play a part in high cholesterol in humans. They have finally changed that bit of advice in accordance with scientific evidence which has shown it to be false.
Studies have shown that in the overwhelming majority of people, dietary cholesterol intake has very little to do with cholesterol levels in your blood. This may sound counter -intuitive, but if one understands the physiology of the body it makes perfect sense! Cholesterol you eat does not directly become cholesterol in your blood. According to old-school thought, cholesterol you eat raises blood cholesterol levels, which leads to increased chances of cardiovascular disease.
The scientific community now understands that cholesterol in your blood is not from what you eat, but created by the body. Cholesterol is a building block of cells, elevated levels are simply a sign that cellular damage is being done to your blood vessels. When this damage occurs, your body increases its production of cholesterol in an attempt to repair the vessel walls.
Basically this means high cholesterol isn't the CAUSE of cardiovascular problems, but rather an effect of the damage being done to blood vessels. The FDA was a little behind on this one (shocking, I know), but they have now recognized that dietary cholesterol is no longer a "nutrient of concern".
